Anchovy

ANCHOVY, name applied to any of several small schooling fishes of the family
Engraulidae. Related to the herring in the order Clupeiformes, it is a bony fish that
reaches a length of about 20 cm (about 8 in) but is generally much smaller. It is
common in the offshore open waters of tropical climates and is especially abundant
off Peru and Chile. One of the world’s most important commercial fishes, it is used
in animal meal, oil, and fertilizer. Some species are filleted, salted, packed in oil,
                        and sold as a delicacy.
